No, you cannot use a stand mixer instead of a blender. A stand mixer is only going to incorporate the ingredients, and if you use certain attachments, it could whip the ingredients, giving you a completely different texture than what you’re after.
A blender will incorporate the ingredients while giving you the texture that you want for your buttermilk ranch dressing.
There are a couple of ways you can thicken your dressing, and it comes down to how you prefer your dressing to taste. You can thicken the dressing by increasing the amount of mayonnaise or sour cream.
If you want a more mayonnaise-forward dressing, use more mayonnaise, and the same goes for sour cream. You could use more of both if you want the flavor to stay balanced.

½ c. sour cream
½ c. buttermilk
1 t. apple cider vinegar
½ t. dried chives (or 1 ½ t. fresh chives chopped)
½ t. dried parsley (or 1 ½ t. fresh parsley chopped)
½ t. dried dill weed (or 1 ½ t. fresh dill chopped)
½ t. garlic powder (or 1 clove garlic minced)
¼ t. onion powder
¼ t. salt
1/8 t. ground black pepper
